So Molly has always said “I wish I could have beans.” How much does it break your heart when your child is requesting an atypical and in a different world very healthy food, and you have to say “Sorry, I wish you could too.” So for you Miss Molly, the light of my life, here are your beans. We serve these over low protein hot dogs, over a baked potato, in a fried potato skin (our favorite), with a fancy breakfast, on toast, etc. Hominy is a delicious puffy, chewy corn kernel that has been soaked in an alkali so that the hull and germ are removed. You can find it in a can (Goya is one brand) at a market that caters to a South American population. It holds it’s texture well and with this syrupy savory sauce you will be doing a happy dance. Take that PKU! PS the sauce is also really nice with pasta for a spaghetti-o type dish.

Ingredients
Method
- Melt butter in a skillet. Add the onions and cook until soft, about 5 minutes.
- Add minced garlic and sauté 30 seconds.
- Add vegetable broth and drained and rinsed hominy.
- In a small bow, combine remaining ingredients and add to the skillet.
- Bring to a boil and then reduce to a low simmer. Cover and cook for 30 minutes.
- Remove the cover. Cook for an additional five to ten minutes if the sauce is too thin. Add a splash of vegetable broth if it is too thick. It should be a syrupy consistency. Add additional salt and pepper to taste.
