Method
- Melt butter in a skillet. Add the onions and cook until soft, about 5 minutes.
- Add minced garlic and sauté 30 seconds.
- Add vegetable broth and drained and rinsed hominy.
- In a small bow, combine remaining ingredients and add to the skillet.
- Bring to a boil and then reduce to a low simmer. Cover and cook for 30 minutes.
- Remove the cover. Cook for an additional five to ten minutes if the sauce is too thin. Add a splash of vegetable broth if it is too thick. It should be a syrupy consistency. Add additional salt and pepper to taste.
Notes
You can make the sauce and freeze in large ice cube trays for a delicious spaghetti-o sauce.
