Method
- Whisk baking mix, baking powder, baking soda, salt, cinnamon, nutmeg, sugar and brown sugar in a bowl. Set aside.
- Add lemon juice (or cider vinegar) to rice milk and let sit for a few minutes.
- Preheat deep fryer to 365 degrees or add at least 3 inches of oil to a medium sized pot.
- Combine rice milk with yogurt and melted butter
- Combine wet and dry ingredients just until combined. Fold in apple pieces
- Combine cinnamon and sugar for rolling in a small bowl and set aside. Or make the simple glaze listed in the note below.
- With a medium cookie scoop, plop batter into the hot oil. Fry for about 90 seconds, turn and fry another 90 seconds. I recommend making about 4 at a time.
- Drain on a paper towel to remove excess oil. Roll in cinnamon sugar or glaze option (see note below). Eat while warm

Simple glaze: 1/2 cup powdered sugar, 2 tsp apple cider or rice milk, dash of vanilla.

Q: Can these be frozen? A: Not sure yet, but I think so. It is a new recipe and so far we have devoured them all so have had no leftovers to test!

Q: Air fryer? A: Nope -- fine for reheating frozen ones, but this is a wet batter so does not work well in air fryer.
