Ingredients
  

  • 1 cup Cook for Love Baking Mix
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Cinnamon, ground
  • 1/8 teaspoon Nutmeg, ground just a dash
  • 2 tablespoons Sugar
  • 1 tablespoon Brown Sugar, packed
  • 1/3 cup Rice Dream, Original Enriched
  • 1 teaspoon Lemon Juice
  • 50 g So Delicious Coconut Yogurt, plain or vanilla
  • 1 tablespoon Butter melted
  • 1 cup Apples cored, peeled and diced into 1/4 inch pieces

  • 1/2 cup Sugar
  • 1/2 teaspoon Cinnamon, ground

Method
 

  1. Whisk baking mix, baking powder, baking soda, salt, cinnamon, nutmeg, sugar and brown sugar in a bowl. Set aside.
  2. Add lemon juice (or cider vinegar) to rice milk and let sit for a few minutes.
  3. Preheat deep fryer to 365 degrees or add at least 3 inches of oil to a medium sized pot.
  4. Combine rice milk with yogurt and melted butter
  5. Combine wet and dry ingredients just until combined. Fold in apple pieces
  6. Combine cinnamon and sugar for rolling in a small bowl and set aside. Or make the simple glaze listed in the note below.
  7. With a medium cookie scoop, plop batter into the hot oil. Fry for about 90 seconds, turn and fry another 90 seconds. I recommend making about 4 at a time.
  8. Drain on a paper towel to remove excess oil. Roll in cinnamon sugar or glaze option (see note below). Eat while warm

Notes

Simple glaze: 1/2 cup powdered sugar, 2 tsp apple cider or rice milk, dash of vanilla.

Q: Can these be frozen? A: Not sure yet, but I think so. It is a new recipe and so far we have devoured them all so have had no leftovers to test!

Q: Would it be ok if I didn’t have the nutmeg? A: yes
Q: Air fryer? A: Nope — fine for reheating frozen ones, but this is a wet batter so does not work well in air fryer.
