Camp Sweet Potato Bacon

Whooie, this recipe has been tweaked over the years and this year at camp we feel like we have it! I updated the recipe after flok Family Camp West 2025. If you haven't tried it, do it! You won't regret it! Special thanks to Katie Corn for her super taster and biochemistry brain which helped us NAIL this recipe in 2025!

Ingredients
  

  • 130 g Raw Sweet Potatoes sliced, long way
Rub
  • 17 1/2 g Maple Syrup
  • 10 g Olive Oil
  • 7 g Liquid Smoke
  • 1 3/4 g Smoked Paprika
  • 1 g Black Pepper
  • 1 g Garlic Powder
  • 15 g Bragg's Coconut Aminos

Method
 

  1. Gather supplies: 1. Sweet potatoes, cutting gloves, knife. 2. dry ingredients from spice rack and flok dry storage. 3. Large sheet pan.
  2. Peel then slice sweet potatoes in strips similar in length and width like bacon.
  3. Combine syrup, oil, spices, and sauce in a dish.
  4. Place strips into brine, marinate overnight (or at least 1 hour).
  5. About 1 hour prior to the meal service, lay strips out on a large baking sheet pan and bake in convection oven at 425 until some strips are starting to caramelize.
