- In a large pot, melt the butter and add the onion, carrot, potato. Saute for 5 minutes until the onions become translucent. Add the stalks ONLY of the broccoli and cauliflower and the garlic. Saute for a minute. Add the mustard powder and cayenne pepper.
- Add vegetable broth, bay leaf, black pepper and salt. Bring to a boil and then reduce to a simmer. Simmer for 30 minutes. Taste and season with more salt and pepper if needed. Remove the bay leaf. Place the soup in a blender and make a smooth puree. Return to pot. Add the bite sizes broccoli and cauliflower florets. Simmer for 5 minutes. Add heavy cream and simmer an additional minute.
