This is comfort food at its best. We like the little florets in the smooth soup, but if you prefer a completely pureed soup then don’t be fussy about breaking the florets into tiny pieces. Just add the chunks with the stalks. This soup is delicious with or without cream and with or without cheese.

Ingredients
  

  • 1 1/3 cups Broccoli, stalk peeled and diced, florets broken into tiny pieces
  • 2 tablespoons Butter, regular or unsalted
  • 1 1/4 cups Onions (1) diced small
  • 3/4 cup Potatoes (1) peeled and diced
  • 2 cups Cauliflower stalk diced and florets broken into tiny pieces
  • 1/3 cup Carrot (1) peeled and diced small
  • 2 Garlic, chopped
  • 1/2 teaspoon Mustard Seed, yellow, ground
  • 1/8 teaspoon Cayenne pepper dash
  • 3 cups Vegetable Broth, preferably Swanson
  • 1/8 teaspoon Bay Leaf, whole (1)
  • 1 teaspoon Salt
  • 1/4 teaspoon Pepper, black
  • 1/4 cup Whipping Cream
  • 2 tablespoons Parsley, fresh, minced

Method
 

  1. In a large pot, melt the butter and add the onion, carrot, potato. Saute for 5 minutes until the onions become translucent. Add the stalks ONLY of the broccoli and cauliflower and the garlic. Saute for a minute. Add the mustard powder and cayenne pepper.
  2. Add vegetable broth, bay leaf, black pepper and salt. Bring to a boil and then reduce to a simmer. Simmer for 30 minutes. Taste and season with more salt and pepper if needed. Remove the bay leaf. Place the soup in a blender and make a smooth puree. Return to pot. Add the bite sizes broccoli and cauliflower florets. Simmer for 5 minutes. Add heavy cream and simmer an additional minute.

What cheese needs to be there and when do I add it? A: Some people like a Broccoli Cheese soup. If you do add 1/4 to 1/2 cup of your favorite shredded vegan cheddar at the end.
