You will need to premake the eggcellent mix and boiled potatoes for this recipe.
Generously grease a 8 inch square pan with butter.
Saute onion in butter in a skillet over medium heat until soft, about 5 minutes. Add broccoli. Saute another minute. Add the peppers, cooking another minute.
Spread half of the toasted bread cubes in your prepared dish. Top with half of vegetable mixture and half of the cheese pieces. Repeat layering with remaining bread, vegetables and cheese.
Whisk eggcellent mix, riced boiled potato, seasonings and fresh spices in a large bowl. In a smaller bowl combine rice milk, mustard and hot sauce. Pour liquids into the dry mix and whisk until combined. Pour evenly over the strata. Let sit for a few hours or overnight in the fridge.
Preheat oven to 350F. Bake strata, uncovered, in the middle of the oven until it is set and cooked through, 50 to 55 minutes. Let stand 15 minutes before serving.
