We serve these over low protein hot dogs, over a baked potato, in a fried potato skin (our favorite), with a fancy breakfast, on toast, etc. Hominy is a delicious puffy, chewy corn kernel that has been soaked in an alkali so that the hull and germ are removed. You can find it in a can (Goya is one brand) at a market that caters to a South American population. It holds it’s texture well and with this syrupy savory sauce you will be doing a happy dance. Take that PKU! PS the sauce is also really nice with pasta for a spaghetti-o type dish.

Ingredients
  

  • 2 TBSP Butter
  • 2 TBSP Onions minced
  • 1 units Garlic minced
  • 2 TBSP Brown sugar
  • 1/2 c Vegetable Broth, preferably Swanson
  • 1 tsp Yellow mustard
  • 1 1/2 c Hominy (1 can) drained
  • 1 tsp Salt
  • 1/2 tsp Apple cider vinegar
  • 1/4 tsp Smoked paprika
  • 1/2 tsp White ground pepper
  • 2 TBSP Ketchup
  • 1 TBSP Pure maple syrup
  • 1 TBSP Barbecue Sauce

Method
 

  1. Melt butter in a skillet. Add the onions and cook until soft, about 5 minutes.
  2. Add minced garlic and sauté 30 seconds.
  3. Add vegetable broth and drained and rinsed hominy.
  4. In a small bow, combine remaining ingredients and add to the skillet.
  5. Bring to a boil and then reduce to a low simmer. Cover and cook for 30 minutes.
  6. Remove the cover. Cook for an additional five to ten minutes if the sauce is too thin. Add a splash of vegetable broth if it is too thick. It should be a syrupy consistency. Add additional salt and pepper to taste.
