Ingredients
  

  • 1 1/8 cups Jackfruit Tacos
  • 1 1/4 cups Vegetable Tacos
  • 1 cup Short grain Brown rice cooked
  • 2 Sandwich Bread
  • 1 1/4 teaspoons Konjac Powder

Method
 

  1. Place veggie taco mix in the bowl of the food processor. Pulse briefly, keeping some texture to the vegetables. (You can also run a knife through the veggies if you do not have a food processor). Place veggies in a bowl.
  2. Place jackfruit tacos and cooked rice in the bowl of the food processor. Pulse briefly, keeping some texture. Place in bowl with the mixed veggies.
  3. Lightly toast 2 slices of CFL sandwich bread, allow to cool. Break in pieces and add to bowl of food processor. Pulse until crumbs. Add to the bowl with veggies.
  4. Mix the veggies, rice and breadcrumbs to combine. Add konjac to the mixture.
  5. Form the mixture into 85 gm patties. Place on a paper towel lined pan. Place in fridge for at least 2 hours.
  6. Heat olive oil in a skillet. Cook burger for about three minutes, flip and cook another three minutes. Serve on low protein bun with desired toppings (chipotle mayo, red onion, lettuce, pickles, avocado, etc)

Q: Hi, I’m in the UK and we work our PHE out differently. 1exch = 1 gram of protein.. Can you explain how you work your protein out so I can convert Thank you A: So in the US 1 exchange = 15 mg phe, in the UK one exchange is 50 mg phe. So if the recipe is 78 mg phe it would be 1.56 exchanges.
