These delightful little treats store beautifully in the freezer (uncooked). Bake when you want a special dessert. Top with non-dairy vanilla ice cream or whipped cream if you really want something incredible. You can fill the pies with whatever fruit is in season. Strawberry-rhubarb is one of our favorites but blueberry-peach is also pretty tasty. The pastry is .45 mg/gm and the filling is .12 mg/gm in case you vary the size. There will be a little left over pie filling, great for making ebelskivers (stuffed pancakes) or adding to hot cereal.

Ingredients
Method
- Preheat oven to 400 degrees.
- Heat butter a large skillet over medium-high heat until sizzling. Add apples, brown sugar, sugar, cinnamon and salt. Cook, stirring frequently with heatproof rubber spatula, until apples are golden brown, about 10 minutes. Add the tapioca starch slurry to thicken the juices, cooking for about a minute. Off heat, stir in lemon juice. Set aside, or in the fridge, to cool completely.
- Meanwhile, roll the pastry dough to ⅛ inch thick. Using a biscuit cutter, cut out 3 ½ inch circles. Take the leftover bits and re-roll as needed. In the end you should have 24 circles, each weighing about 20 gm.
- Dip your fingers in a small bowl of water and moisten the edges of the rounds. Place a heaping tablespoon (30 gm) in the center of half of the rounds. Place the other rounds on top, pinch the dough together and then use a fork to seal. Make four slashes with a sharp knife on top. Freeze what you are not eating today.
- Bake for 15 to 18 minutes.

Reader Q&A:
Q: I want to try and make a pop tart and was wondering if this dough would be best to start with. A: Hi Linda,
This is our favorite for pop tarts. The pie pastry under the apple pie recipe will also work. It is easier to make, but it is not as sturdy. For a toddler’s hands I would recommend this one if you are up for it! Give that cutie a hug from me. Stay safe.
