So my kids always get a kick out of me making this meal. There is a lot of snickering and always a wise-ass comment about my wine consumption and that based on the name it is no wonder this is one of my favorite quick midweek dinners. I hate teenagers. This pasta dish is so flavorful and so easy to make. You can change up the veggies if you like. I am brand specific for the soy sauce, since it is the lowest in phe. If you change it, adjust the phe amount. You can get sambal oelek (fresh chili paste) in a good Asian Market and it is super spicy (and delicious), so adjust to your taste. The recipe above assumes you are making it all low pro, but we simply use 1/4 sauce, veggies for low pro version and also cook ¾ of the box of regular high protein linguine fini for the rest of the family. Sometimes we add cooked chicken breast or tofu to the high protein portion so it is a simple meal for the entire family.

Ingredients
  

  • 400 g Aproten Linguini, 100 gm per low pro serving
  • 1 TBSP La Choy Soy Sauce
  • 2 TBSP Bragg’s Coconut Aminos
  • 1/2 c Vegetable Broth, preferably Swanson’s
  • 1/4 c Brown sugar
  • 2 TBSP Lime Juice
  • 1 tsp Sambal Oelek Chili Paste
  • 1/4 c Vegetable oil
  • 2 c Broccoli florets cut into bite-sized pieces
  • 4 units Garlic minced
  • 1/4 c Cilantro, fresh coarsely chopped
  • 1/4 c Scallions (4) sliced thin on a bias

Method
 

  1. Whisk together the soy sauce, coconut aminos, vegetable broth, brown sugar, lime juice and sambal oelek. IF YOU ARE MAKING TWO VERSIONS OF THIS MEAL: Put 60 gm of the mixture in a smaller bowl for the low protein version. Set bowls aside.
  2. Bring two large pots of salted water to a boil, assuming you are making a high and low protein version at the same time. Cook the linguine until a little firmer than al dente (about 6 minutes for Aproten, 7 for the high protein pasta). Drain.
  3. Heat 2 teaspoons of oil in a skillet over high heat. Add broccoli and cook for about 1 minute. Add the garlic and sauté for 30 seconds. IF YOU ARE MAKING TWO VERSIONS OF THIS MEAL: Take the low protein portion (53 gm) , and put in a smaller non stick skillet.
  4. Add 1 tablespoon of the oil to the low protein skillet, 2 tablespoons to the high protein skillet. Add the drained noodles and the soy sauce mixtures to the skillets. Toss gently until the sauce has thickened and been mostly absorbed by the noodles, about 3 minutes. Sprinkle with scallions and cilantro. Serve with lime wedges.

Notes

FlexiPHE tip: if you need to make this lower in phe, you can replace the La Choy Soy Sauce with Coconut Aminos and use peppers and carrots in place of the broccoli.
