So you can’t have parmesan cheese, anchovies or eggs – the three basic ingredients that give Caesar Salad it’s classic taste. My philosophy is if I cannot adapt something for Molly, I don’t eat it myself. Caesar Salad was something I loved so I was pretty determined to figure out a way. The toasted nori gives a slightly fishy flavor, the miso provides a cheesy taste and the mayonnaise makes it creamy. Nori and miso are available in the health food store. I do not use a lot of nori in my cooking so I buy Eden’s Spicy Nori Strips, which has small packets wrapped in small amounts to maintain freshness. Miso is made from fermented soybeans. It is a bit high in protein (2 tsp<1gm), but it packs a punch and a little goes a long way. Again, you are not making two versions – this is delicious and everyone will enjoy it!
