Beer Cheese Dip

If you are going to make pretzels, I am going on the assumption that you are as crazy as I am. Therefore, here is your cheese dip to go with it. This cheese dip is also great for nachos, popcorn, KFC Cauliflower, stuffed potatoes, GF pretzel sticks and on top of broccoli or cauliflower. You could also use it for mac & cheese.

Ingredients
  

  • 2 TBSP Butter
  • 2 TBSP Tapioca starch
  • 6 fl.oz. Rice milk
  • 5 fl.oz. Beer
  • 1 tsp Worchestershire Sauce
  • 1 tsp Dijon Mustard
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Smoked Paprika
  • 1/4 tsp Salt
  • 4 oz. Just Like Cheddar Shreds
  • 5 units Chao Tomato Cayenne finely diced
  • 4 units Follow Your Heart Smoked Gouda Style Slices diced into little squares

Method
 

  1. Dice or shred your vegan cheeses if needed. (This is a great recipe to use up what you have in your fridge.) Set aside.
  2. Combine 1/4 cup of the rice milk with the tapioca. Whisk and set aside.
  3. Melt the butter in a pot and add the remaining rice milk and beer. Heat for about 3 minutes. Add in cheese, dijon mustard, worcestershire sauce, garlic powder, smoked paprika, salt and pepper. Heat for another few minutes until it stars to simmer and the cheese begins to melt.
  4. Whisking constantly, add in the starch and rice milk slurry. Cook until it thickens, about 2 minutes. (If your cheese has not melted completely, just use an immersion or regular blender).
