This tasty treat is a perfect way to use up extra pizza dough in the fridge. It is great for brunch or lunch.

Method
- Heat your oven to 500 degrees. Take 250 gm of your leftover pizza dough out of the fridge, bring to room temperature.
- Meanwhile, lay the zucchini slices on a clean kitchen towel or paper towel lined baking sheet. Sprinkle with salt so they release some of their liquid. Let sit for 30 minutes. Pat dry firmly with additional paper towels or a kitchen cloth.
- Brush a 9 x 9 brownie pan with 1.5 teaspoons of olive oil. Knead the dough a bit on a starched surface. Roll it out into the greased pan. The dough will be on the thin side.
- Cut the Follow your Heart Smoked Gouda into thin slices. Place on top of the dough.
- Add the zucchini slices, bringing them all the way to the edge of the dough. Sprinkle the bread crumbs on top and drizzle with the olive oil. Add pepper to taste.
- Bake for 25 minutes.
- While the pizza is baking, lightly dress the arugula and red onion with your favorite light vinaigrette or the olive oil, lemon juice, salt & pepper listed in recipe.
- Top your pizza with the arugula salad. The pizza is delicious warm or room temperature. If you are bringing it with you to work or school, then do not dress the salad or top the pizza until ready to eat or it will get soggy.
