Ingredients
  

  • 1/2 cup Vanilla Mug Cake Mix
  • 3 tablespoons Rice Dream, Vanilla Enriched Rice Milk or any other non-dairy milk you use (just adjust protein)

Method
 

  1. Add 1/2 cup (80 gm) of the pre-made vanilla cake mix to your mug. Whisk in 3 tablespoons (45 gm) of your favorite non-dairy milk. Whisk until lumps are all gone.
  2. Microwave for 90 seconds. If not done (there will be variability depending on your microwave), do 20 second intervals until it is cooked through.

Notes

VARIATIONS:
  • Chocolate Chip Mug Cake -- add 2 tsp mini chocolate chips
  • Confetti Mug Cake - add 1 tablespoon of colored sprinkles (the jimmies)
  • Lemon Mug Cake - replace 2 tablespoons non-dairy milk with lemon juice
  • Blueberry Lemon Mug cake - do the above for lemon cake, add 1 to 2 tablespoons fresh or frozen blueberries
  • Lemon Coconut Mug Cake - replace 2 Tbs of the non-dairy milk with lemon juice + 1 T toasted coconut flakes + coconut extract
  • Apple Cinnamon Mug Cake - add 1/4 tsp cinnamon and 1/4 cup diced apple
  • Peach Mug Cake - add 1/4 cup diced peaches
  • Strawberry Shortcake in a mug -- add 1/4 cup diced strawberries and when cooked, top with whipped cream
  • Orange Cranberry Mug cake - replace 2 tablespoons of the non-dairy milk with orange juice, add 1/4 cup fresh cranberries
  • Ginger Peach Mug cake - add 1/4 tsp ginger + 1/4 cup diced poached pears
