Tempura Cauliflower

Please note that this tempura batter is the almost the same batter used in Buffalo Things. I recommend you make it for your Chinese Food Extravaganza, then add the spices and put the batter in the fridge and have buffalo things and onion rings the next day. Or you can make the battered cauliflower and freeze for another time. This fried cauliflower is delicious with any Asian sauce. On a day when I don't feel like doing much cooking, we will order Sweet and Sour Chicken, sauce on the side. While we are waiting to pick it up, I will make the battered cauliflower and share the sauce! (See I can take a short cut every once in awhile!). You can also make tempura battered string beans, thinly sliced eggplant, zucchini, sweet potato, peppers, etc.

Ingredients
  

Batter
  • 1 cup Cook for Love Baking Mix
  • 1/2 teaspoon Xanthan Gum
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Sugar
  • 1 cup Seltzer Ice cold (or beer, which adds 29mg phe to the recipe total)
  • 2 3/4 cups Cauliflower Broken into 45 bite-site florets
  • 1/2 cup Wheat Starch
  • 8 cups Canola oil

Method
 

  1. In a large bowl, combine CFL baking mix, xanthan gum, baking powder, salt and sugar. Whisk to combine. Stir in ice cold seltzer (or beer) and mix well. Place batter in fridge to keep cold (up to overnight).
  2. Soak cauliflower in water
  3. Add the wheat starch to a medium sized bowl and set aside.
  4. Preheat oil to 375 degrees.
  5. Dip each floret in the wheat starch and then in the cold batter.
  6. Fry for three to four minutes. When done, remove from the oil and drain on paper towels.
  7. Freeze extra cauliflower to make life easier another day!

Notes

You can freeze the battered and fried cauliflower to have later. Place frozen cauliflower in hot preheated oven (425 degrees) for about 8 to 10 minutes.
