Pizza Bites

For those that love savory, these are a perfect after school snack and a great appetizer for New Year's Eve and Super Bowl Sunday. If we have any leftover pizza dough on hand, we make a few of these so we are always in stock. They freeze really well so are handy to have on hand. You can get creative here and use different fillings. We have tried Mushroom Bolognese sauce (10 gm), roasted veggies with pesto and 1/2 of a veggie ball with a tsp of marinara so far and loved them all.

Ingredients
  

Primary Ingredient Group
  • 380 g Cook for Love Pizza Dough (half the recipe)
  • 1/2 cup Marinara Sauce
  • 2 1/2 ounces Follow Your Heart Vegan Gourmet Mozzarella Shreds
Garlic Butter
  • 4 tablespoons Butter
  • 2 Garlic minced
  • 1/4 teaspoon Oregano, ground

  • 1 tablespoon Oil, Olive

Method
 

  1. Preheat oven to 450 degrees. Line a baking sheet with parchment paper. Drizzle olive oil onto parchment paper. Add water to a small bowl for sealing dough, set aside.
  2. On a heavily starched work space, gently roll pizza dough out to about 12 x 12 square. Rotate dough frequently as you are rolling it out and add more wheat starch as needed to prevent it from sticking to surface.
  3. Using a pizza cutter, cut dough into 5 evenly spaced rows and columns, creating 25 squares that are roughly 2 1/2 inches. Place 1 tsp (5 gm) of thick sauce and 3 gm shredded mozzarella a little to the left of the dough square. Dampen your finger with the water, and run it around the edges of the square. Fold down the top of the dough (see pictures), dampen the new top of the dough, roll it, pressing the top a bit once the filling is contained to seal. Press the side seal firmly. Repeat with remaining squares.
  4. Add pizza bites to prepped baking sheet. Bake for about 8 minutes.
  5. Meanwhile, make garlic butter. Melt butter in a pan, add minced garlic and oregano and cook for about 30 seconds so garlic releases its flavor.
  6. Brush the bites with garlic butter. Bake another 4 minutes. Brush with butter again, and bake another 3 minutes. Serve hot with marinara for dipping.
  7. If freezing, allow to cool on a rack. Place in a single layer in a freezer Ziplock bag. To reheat, either use an air fryer (spritz with olive oil and bake about 6 minutes at 390) or hot oven (400 degrees for about 10 minutes).

Q: Hey! I had to mix in a LOT LOT LOT of wheat starch after I made the dough to keep it from sticking. Is this normal? I’ve never made any form of dough before so I uncertain what “normal” is. Thanks! A: No, should not have had to add much wheat starch. Did you use a gram scale or dry cup measurements? Have you watched the sandwich bread video?
