Pasta Alfredo

This could possibly be the simplest recipe on CFL's site, yet one of the most delicious. You can use this sauce for a nice pasta primavera as well (just add whatever veggies you like). We use the same sauce for our high protein version as well. It is so rich and flavorful.

Ingredients
  

  • 80 g Aproten Linguini
  • 1 Garlic minced
  • 1/4 teaspoon Red Pepper Flakes
  • 1 tablespoon Butter
  • 1 fluid ounce White wine
  • 1/2 teaspoon Salt to taste
  • 1/4 teaspoon Pepper to taste
  • 1/2 cup Vegetable Broth, ready-to-serve
  • 1/2 tablespoon Alouette Garlic & Herbs Spreadable Cheese
  • 30 g Heavy Cream
  • 5 Basil minced

Method
 

  1. Bring a large pot of salted water to a rapid boil. Add the low protein pasta and cook for only three to four minutes. Drain and set aside.
  2. In a skillet, add the butter, garlic and red pepper flakes. Cook one minute over medium heat. Add the white wine. Cook for two to three minutes, allowing the wine to reduce to half. Add the vegetable broth and salt & pepper to taste. Bring to a boil and add the al dente pasta. Cover and cook for an additional three minutes. Remove cover and reduce heat to low.
  3. Add fresh basil, Alouette and heavy cream. Allow to heat through. Serve immediately.

Notes

Flexi-Phe - To make this recipe lower in protein, you can substitute the Alouette and heavy cream with 1 tablespoon Violife Cream Cheese.

Q: Instead of the wine what else could I use? A: Will be fine without it, just add a little bit of lemon juice.
Q: Quick question in ingredients it says 1 g pepper then below in instructions it says red pepper flakes so I wasn’t sure if it’s red pepper or black pepper? Looks delicious!

Q: What kind of white wine is best for cooking? Is there a type, brand? Clueless here. A: If you are not a wine drinker, just buy those tiny bottles to use for cooking. Freeze whatever you dont use in an ice cube tray for next time. Any kind is fine.
Q: Could I use Trader Joe’s vegan cream cheese in place of the alouetta garlic and herb spreadable cheese? I can’t find alouette, but I have the vegan cream cheese. Would the phe and quantities be similar? A: It would certainly work, but not sure of the phe difference. You can also use violife just like cream cheese (which is listed in how much phe), which would significantly lower the phe.
Q: Hi Brenda! Do you have a tip for thickening the Alfredo sauce if we don’t want to make it with noodles? It is so good over Zuchinni, but without the starch from the noodles is pretty runny. Thanks! A: I would eliminate the broth, or cut down significantly.
Q: Just to be clear I can use white cooking wine? A: Yes, or any open bottle of white wine you have. (I always freeze leftover white wine in ice cube trays so I have it for cooking). -- Brenda
