Method
- Preheat oven to 500 degrees. Place baking sheet in the oven.
- In a large pot with cold water and salt bring potato slices to a boil. Allow to boil for just 2 to 3 minutes.
- Drain potatoes. In a bowl toss potatoes with the olive oil, Tabasco and vinegar, salt and pepper.
- Carefully remove hot pan from the oven and transfer potatoes in a single layer (otherwise they steam and do not crisp up).
- Bake for about 30 to 40 minutes, tossing every 10 minutes to make sure each side gets lovely and brown.
