Oven Baked Spicy Fries

French Fries are simply delicious, and all of us in our house eat way too many of them. These oven baked fries taste even better than the deep fried version and my waist line very much appreciates that. Depending upon how much of a kick you like to your food, feel free to add more Tabasco. These are great served with a sandwich, veggie burger, or veggie nuggets. I prefer russet potatoes, but red potatoes work well too.

Ingredients
  

  • 4 cups Russet Potato (3) washed and cut into 1/2 inch strips
  • 1 tablespoon Olive Oil
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Tabasco hot sauce
  • 2 tablespoons Vinegar malt ideally (but use what you have)
  • 1/4 teaspoon Fresh ground pepper

Method
 

  1. Preheat oven to 500 degrees. Place baking sheet in the oven.
  2. In a large pot with cold water and salt bring potato slices to a boil. Allow to boil for just 2 to 3 minutes.
  3. Drain potatoes. In a bowl toss potatoes with the olive oil, Tabasco and vinegar, salt and pepper.
  4. Carefully remove hot pan from the oven and transfer potatoes in a single layer (otherwise they steam and do not crisp up).
  5. Bake for about 30 to 40 minutes, tossing every 10 minutes to make sure each side gets lovely and brown.
