- Pour the rice milk in a large flat bottom container. Add the onions to the rice milk, arranging them so they are submerged. Cover and refrigerate for at least an hour.
- Add the wheat starch to a medium sized bowl and set aside.
- In a large bowl, combine CFL baking mix, xanthan gum, baking powder, salt, sugar, garlic powder, onion powder and cayenne pepper. Whisk to combine. Stir in seltzer or beer and mix well. Place in fridge. If the batter is ice cold, and the oil is really hot, the onions rings will be super crispy.
- Preheat oil to 375 degrees.
- Dip each onion ring individually in the wheat starch and then the batter.
- Fry for two to three minutes. When done, remove from oil and drain on paper towels.
- You can keep the onions warm by placing them in a 300 degree oven.
- Serve with ketchup or chipotle mayo.
