Onion Rings

Light and delicious, these onion rings are incredible. You could change up the spices and also make a tempura and fry whatever veggies you like. It is important to soak the onions to take out the bite. Dipping the rings in the wheat starch before the batter allows the batter to stick once it goes in the oil. These are Jack's favorite food. They are great with chipotle mayo or plain old ketchup. The batter is the same as the buffalo things, so if you are making one, you might well have a fried food feast!

Ingredients
  

Primary Ingredient Group
  • 250 g Vidalia onions sliced into 1/2 inch rings, separated
  • 4 cups Rice milk
  • 60 g Wheat Starch
Batter
  • 1 cup Cook for Love Baking Mix
  • 1/2 teaspoon Xanthan Gum
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Sugar
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • 1/4 teaspoon Ground Cayenne pepper
  • 1 cup Seltzer water ice cold (or beer, which will add 29mg phe to the recipe total)
For Cooking
  • 8 cups Canola oil

Method
 

  1. Pour the rice milk in a large flat bottom container. Add the onions to the rice milk, arranging them so they are submerged. Cover and refrigerate for at least an hour.
  2. Add the wheat starch to a medium sized bowl and set aside.
  3. In a large bowl, combine CFL baking mix, xanthan gum, baking powder, salt, sugar, garlic powder, onion powder and cayenne pepper. Whisk to combine. Stir in seltzer or beer and mix well. Place in fridge. If the batter is ice cold, and the oil is really hot, the onions rings will be super crispy.
  4. Preheat oil to 375 degrees.
  5. Dip each onion ring individually in the wheat starch and then the batter.
  6. Fry for two to three minutes. When done, remove from oil and drain on paper towels.
  7. You can keep the onions warm by placing them in a 300 degree oven.
  8. Serve with ketchup or chipotle mayo.

Q: Can you do this in air fryer? Have you tried it? A: I have not tried. I imagine since it is a wet batter, it will not work.
