Mexican Rice

This rice goes great with tacos and burritos and the mushroom fajita recipe. It is also a nice side dish any night of the week. It is a great way to fill up without adding too much phe. For flavored rices, I prefer Dietary Specialties brand of low protein rice. The fire roasted tomatoes are available in your supermarket with the canned tomatoes (Muir-Glen is the brand I buy). If you cannot find them, you can substitute with regular tomatoes.

Ingredients
  

  • 1 cup Water
  • 1 tablespoon Butter, regular or unsalted
  • 1/6 cup Onions chopped fine
  • 1/3 cup Canned Fire-roasted tomatoes or regular canned tomatoes
  • 1/4 teaspoon Chopped Serrano pepper
  • 1 Garlic, fresh cloves, chopped minced
  • 100 g Dietary Specialties Low-Protein Rice or other low-protein rice
  • 1/4 cup V-8 Spicy 100% Vegetable Juice
  • 1/2 teaspoon Salt
  • 1 tablespoon Fresh cilantro minced
  • 1 teaspoon Lime Juice

Method
 

  1. Bring the water to a boil, covered, in a small saucepan. Cover to keep hot.
  2. Meanwhile heat a medium sized skillet. Add the butter and onion and cook over medium-low heat, stirring occasionally, until the onion is softened, about 4 minutes. Add the fire-roasted tomatoes, seranno chile and the garlic. Cook until fragrant, about 2 minutes.
  3. Add the low protein rice, stir to coat and cook for about two minutes. Transfer the rice mixture to the hot water in the saucepan. Add the V-8 juice and salt, bring to a boil. Reduce heat to low, cover and simmer until the water is absorbed, about 15 minutes. Taste a grain, if not soft enough, add 2 tablespoons of water, and cook for an additional 5 minutes.
  4. Remove from heat. Add the cilantro – do not mix in. Let stand for 5 minutes, then add the lime juice. Fluff the rice with a fork and season with salt and pepper to taste.
