Jicama Slaw

If you have never had jicama, go to the store now and get some. It is crispy and delicious – perfect for a low fat slaw (yes, adults out there, I am listening). Where is it and what does it look like? In the produce aisle -- a little bigger than a grapefruit with a thin brown skin. It is light and refreshing side dish on its own, but the crunch factor transforms the southwestern portabella burger to a whole new level.

Ingredients
  

  • 1/4 cup Fresh Lime Juice from 2-3 limes
  • 2 g Fresh Serrano chilis stem, seeds and ribs removed, minced
  • 1 tablespoon Honey
  • 1/2 teaspoon Salt
  • 2 3/4 cups Jicama peeled and cut into matchsticks
  • 3 1/2 Raw Carrots coarsley grated
  • 5/8 cup Cilantro leaves chopped

Method
 

  1. Whisk together lime juice, honey, serrano pepper and salt in a bowl
  2. Combine jicama and carrots in a medium sized bowl. Pour the dressing over the mixture and toss to coat. Mix in the cilantro. Let sit at room temperature for at least 15 minutes before serving.
