Method
- In a double boiler (place a bowl in a pan with simmering water), melt the chocolate and butter. Once it melts, whisk in the raspberry jam and liquer. Place two 1-teaspoon measurements of melted chocolate mix on a piece of parchment paper. Put in the freezer to harden.
- Place cocoa powder, sugar and butter into hot coffee. Set aside to cool. Add vanilla once it is cooled.
- Grease 2 ramekins with melted butter.
- Whisk baking mix, baking powder and salt in a medium bowl. Pour in coffee mixture and whisk for a few minutes until evenly incorporated.
- Pour evenly into prepared ramekins. Place ramekins in the fridge for two hours while you make and enjoy dinner.
- Preheat oven to 425 degrees. Remove chocolate disc from freezer. Place one in each ramekin, gently submerging just enough so it is covered with batter but not so far that it touches the bottom of the ramekin.
- Bake for 15 minutes. Allow to cool for two minutes before inverting on a plate. Chances are the cake will split, but no worries, add a scoop of your favorite low pro ice cream on top! Serve immediately.

Q: If we want a solid chocolate flavor inside the lava cake - what can we substitute, or can we just leave out the jam and liquor? A: Hi Heidi,
We also made a Kahlua center, substituting the jam and Chambord with 1 tsp Kahlua, pinch salt, and a little bit of espresso powder which was my favorite. But for a pure chocolate, add another chocolate wafer, 1/2 tsp butter and a pinch of salt and you should be all set.

Q: Do you need to let it sit in the fridge for 2 hrs? Or is it ok to cook this after its been in the fridge for less time like an hour?

I am guessing less time in fridge is fine. That happened to be the amount of time I was running a bunch of other errands!

Q: Do these have to be made and served immediately? Is there a way to make ahead of time and heat up? A: I dont think they will reheat well but that being said, I never tried. You do make the batter ahead of time and let sit in the fridge for a few hours, so you just pop in the oven after dinner.
