- Preheat oven to 375. Grease a bread pan with butter.
- Combine baking mix, metamucil, baking powder, baking soda and salt in a large bowl.
- In a medium sized bowl combine THREE tablespoons of the melted butter, honey, plain coconut yogurt and beer.
- Make a well in the dry ingredients. Add wet ingredients to that well. Combine the two and stir until fairly smooth.
- Add the vinegar, quickly mix and pour batter in the prepared pan. Smooth the top with the back of a spoon. Pour remaining tablespoon of butter on top.

- Bake for 45 to 50 minutes or until a toothpick or piece of dried spaghetti inserted through the loaf comes out fairly clean (ok if there are a few crumbs sticking to it but not uncooked batter).
- Remove from oven and let cool for 5 minutes on a cooling rack before removing from the pan. Let cool completely before slicing.
