Cook for Love Pancakes

Pancakes -- yum! The ultimate comfort food. I must confess when things are crazy in our house or someone has had a bad day, we reach for Brunner - breakfast for dinner. This is very unchef-like and I am sure my instructors at school would not be impressed, but the kids love it. This recipe is so simple that Molly started making her own pancakes a few years ago.

Ingredients
  

  • 1/2 cup Cook for Love Pancake and Waffle Mix
  • 1/4 cup Rice Milk
  • 1/4 teaspoon Lemon Juice

Method
 

  1. Place pancake mix into a medium sized bowl. Whisk together rice milk and lemon juice. Add to the mix, and stir gently until combined.
  2. Heat a griddle over medium heat for 3 to 5 minutes. Brush it with oil. When the griddle is at the proper temperature, a drop of water will sizzle and bounce across the surface.
  3. Ladle the batter onto the griddle. Turn the pancakes over when the edges look dry and bubbles come to the surface but don't break, about 2 minutes. Finish cooking on the other side, about 1 1/2 minutes longer.

Reader Q&A:
Q: Can I use a different kind of "milk" such as coconut or almond instead of rice milk? A: Yes. Just adjust the phe amounts. Don't use pure coconut milk because there is more fat in that which will likely impact the end results (making them denser).
Q: How much phe is in 100 g of the CFL BAKING. Mix? A: All of the protein/phe/calorie information is on the recipe to the right side. It is .59 mg/gm so 100 gm would be (100 x .59) 59.
Q: Can you make end freeze them? Any tips on this? A: Since it is so easy if you have the mix on hand, I tend to make them fresh. That being said, you can easily make and freeze. I would say defrost at room temperature for about 15 minutes, then pop in the toaster.
Q: Do we have to use milk? Can we just use water?
Alos, can I use regular whole/cow's milk to up the protein count? A: A non-dairy milk will add more flavor to the recipe. (The just add water high protein pancake mixes typically contain dried milk). You can use regular cow's milk to up the protein, but my favorite add to boost the protein is regular mixed egg -- I add 10 gm to a batch which adds 68 mg phe. -- Brenda
