Cook for Love Pancake and Waffle Mix

Nothing says weekend like pancakes or waffles for breakfast. When this mix is in the fridge, it’s such a snap, you might be tempted to break the rules and make them during the week. Once the butter is added, the mix keeps in the fridge for a month and the freezer for up to three months. We keep ours in a mason jar. This recipe uses the Baking mix.

Ingredients
  

  • 3 cups Cook for Love Baking Mix
  • 4 teaspoons Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 2 tablespoons Sugar
  • 2 tablespoons Brown Sugar
  • 6 tablespoons Butter

Method
 

  1. Place the baking mix, baking powder, baking soda, salt, and sugars in the work bowl of a food processor fitted with a metal blade. Process for 30 seconds, or until the butter is evenly distributed and the mix resemble sand. If you do not have a food processor and are making by hand, use your fingertips or a pastry cutter and cut in butter until evenly incorporated and the mixture resembles sand.

To Store: This mix keeps in an airtight container (we use a mason jar) in the fridge for up to a month and the freezer for up to three months

Q: I am a novice to both cooking and PKU. This is more of a generic question. I notice that in your recipes you either decide the egg is worth the phe or work around the egg altogether (as in this recipe where a traditional pancake recipe usually has one egg) but never seem to choose to use an egg replacer. Why is that? A: Egg replacers for baking (like ener-g) tend to have a binder and rising agent. The pancake recipe has binders and rising agents already so in that case it is not necessary. I find sometimes the egg replacers can have a chalky taste to the end product, but many members use them in place of the half egg used in some of the cookie recipes and are happy with the end result.

What is the alternative.. A: Unfortunately, there is no substitute for wheat starch. If you go to the IN OUR PANTRY section, you can find where you can purchase it. If you are not in the US, and there is a low pro baking mix, you might be able to substitute that depending upon the ingredients.
