Coffee Cake Cookie

In general, I am not big on sweets. That being said, never, ever leave me alone with a crumb top coffee cake. Last week my niece came over with Gilmore Girl Coffee Cake Cookies that she had made and oh my I knew I needed to adapt them ASAP! The original recipe comes from the Palatable Life.

Ingredients
  

Cinnamon Dough
  • 2 1/4 cups Wheat Starch
  • 1 teaspoon Xanthan Gum
  • 1/2 Vanilla Pudding, dry mix, instant
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 2 teaspoons Cinnamon

  • 8 tablespoons Butter
  • 4 tablespoons Canola Oil
  • 1 cup Brown Sugar
  • 1/2 Large Egg white & yolk combined, measure out 1/2
  • 2 tablespoons Mayonnaise
  • 2 tablespoons Water
  • 1 teaspoon Vanilla Extract
Struesel top
  • 3 tablespoons Butter
  • 1/4 cup Brown Sugar
  • 1/4 cup Wheat Starch
  • 1/4 cup Tapioca starch
  • 1/2 teaspoon Xanthan Gum
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Salt
Icing
  • 1/2 cup Powdered Sugar
  • 2 teaspoons Rice milk
  • 1/4 teaspoon Vanilla Extract

Method
 

  1. Preheat oven to 350. FOR THE COOKIE DOUGH: Combine the wheat starch, xantham gum, salt, baking powder, baking soda, pudding mix and cinnamon in a bowl, mix to combine. Set aside.
  2. Combine the butter, oil and dark brown sugar in the bowl of a standing mixer with the paddle attachment. Beat at medium speed until it is smooth, about 3 minutes. Add the egg, mayonnaise, water and vanilla, beat at medium speed until it is combined, about 30 seconds. Add dry ingredients and beat at low speed until just combined, about 30 seconds, scraping down bowl as needed.
  3. FOR THE STREUSEL: Combine all the ingredients in a bowl and mix with a spoon or your hand. The mixture should stick together but crumble.
  4. Form dough into generous tablespoon sized 1 1/2-inch balls. Place dough balls on parchment lined baking sheet. Using a spoon, make an indent on top of the dough and sprinkle a scant tablespoon of streusel on top of the cookie.
  5. Bake for 13 to 15 minutes.
  6. While the cookies are baking, make the icing by whisking the powdered sugar, rice milk and vanilla. Drizzle on top of the cooled cookie.
