Refried Butternut Squash

This is a very quick cheese sauce that is delicious for Mac & Cheese, but also on stuffed baked potatoes, broccoli and cauliflower and French Fries. I freeze in those 2 oz. silicon ice cube trays so I can get dinner or lunch on the table in minutes. The chao tomato cayenne adds a nice little kick. Add more or less in equal amounts to the American Cheese slices depending upon your preference. (You can also use FYH pepper jack or Daiya cutting board pepper jack).

Ingredients
  

  • 5 Follow Your Heart American Style Slices diced
  • 2 Chao Tomato Cayenne diced
  • 4 tablespoons Butter
  • 1 fluid ounce Heavy/Whipping Cream
  • 3 fluid ounces Rice milk
  • 1/2 teaspoon Tapioca starch

Method
 

  1. Add tapioca starch to the rice milk, mix and set aside.
  2. Melt the butter in a small pot. Add the heavy cream and heat. Add in the small diced cheese. Allow to melt. Add in the rice milk and tapioca mix. Let cook another few minutes. If it is not smooth, use an immersion blender or regular one. Process for a few seconds That’s it!
