If you do not like spicy, you will not like these. They are not a good option for little kids, but pull out the hot sauce in the batter and the chili powder in the mix and they will still be great without the heat. If you do not like spicy, you will not like these. - Drain the jackfruit. Soak in cold water, swish around. Drain, soak in fresh water, swish, drain and repeat to remove the brine. Remove the core, which kind of looks like the center of a pineapple. Discard the seeds. Squeeze dry in a clean kitchen towel. In the end, you will only have about 170 gm of jackfruit.
- Melt the butter in a saucepan. Add the jackfruit and minced onion. Saute for about 10 minutes, so Jackfruit starts to brown. Add garlic and cook for another 30 seconds. Add the vegetable broth and Chicken-less seasoning salt. Simmer on low until the liquid is absorbed.
- Remove from heat. Sprinkle the konjac on top and mix in. Spoon a tablespoon of the mix (15 gm) onto a parchment lined board that will fit in your freezer. Shape a little into nugget form. Freeze for 30 minutes.

- Meanwhile, combine baking mix, xanthan gum and spices in a small bowl. (Or take 40 gm of prepared KFC mix from your mason jar).

- In a small bowl, combine the egg replacer with the ice cold water. Mix until blended. Add the Frank’s hot sauce to the egg replacer. Add 1 tablespoon of the seasoned starch mix to the egg mix.

- Add the breadcrumbs to the starch mix for extra crunch. You can also add crushed spicy doritos or takis if you happen to have them.
- Preheat oil to 375.
- Dip the semi frozen nuggets into the egg replacer mix and then into the starch mix. Deep fry for 3 to 5 minutes, until golden brown.

- Serve with chipotle mayo, BBQ sauce or ketchup.
Notes
If you cannot find Trader Joe’s Vegan Chicken-less seasoning salt, combine 1/2 tsp salt, 1/4 tsp onion powder, 1/8 tsp numeric, 1/8 tsp garlic powder.
