These are super simple and super delicious treats once the cool weather starts to roll around. You can even do a brownie and pumpkin swirl if you are feeling adventurous — just do one full recipe of regular brownies and one full recipe of pumpkin. Place scoops of both in a 8 x 13 baking pan and swirl them together. YUM!

Ingredients
  

  • 8 tablespoons Butter melted
  • 1/2 cup Sugar
  • 1/2 cup Brown Sugar, packed
  • 1 teaspoon Cinnamon, ground
  • 1/2 teaspoon Ginger, ground
  • 1/4 teaspoon Allspice, ground
  • 1/4 teaspoon Cloves, ground
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Baking Powder
  • 3/4 cup Cook for Love Baking Mix
  • 1/2 1/2 Large Egg, beaten
  • 5/8 cup Pumpkin, canned

Method
 

  1. Preheat oven to 350F. Butter an 8Ɨ8-inch baking dish.
  2. Melt butter in a pan. Remove from heat. Add sugars. Set aside to cool.
  3. Combine baking mix, baking powder, cinnamon, ginger, allspice, cloves and salt in a bowl. Whisk to combine.
  4. Add the egg to the cooled butter sugar mixture and whisk until thoroughly combined. Add the pumpkin. Again, using some muscle whisk it all until blended well.
  5. Fold the starch mixture into the batter and mix until just combined. Pour into prepared baking pan and spread to an even layer.
  6. Bake 20 to 25 minutes. Allow to cool in the pan.

Q: Can I use the Cambrooke Baking mix in replacement of the CFL Baking Mix?
I can’t find Wheat Starch anywhere. A: It will not be the same but in a pinch might be ok. The CB baking mix contains fats, sugars and rising agents, whereas the CFL baking mix is a pure flour substitute. You can get wheat starch through any of the low pro specialty stores, in a good asian market or amazon. See FAQ for specifics.
