Finding a cereal that is good when your tolerance is low is a challenge. The ones that are possibly suitable tend to be super sweet and over 60 mg for a small bowl. The low protein specialty cereals are so crunchy that they are not always a great choice for little ones. This cereal tastes just like Honey Smacks and is 36 mg for a FULL sized bowl. You can vary the flavors to your liking. For an Apple Jack flavor add pulverized freeze dried apples and cinnamon. For Cocoa Krispies, add 1/2 cup Ghiradelli Sweet Ground Cocoa. If you are looking for something a little more filling, I recommend adding some neutral fiber to the mix as well (I like Renew Life Organic Clear Acacia Fiber or Inulin).

Ingredients
  

  • 10 cups Puffed Rice Cereal (different from rice krispies)
  • 4 tablespoons Coconut Oil
  • 1/4 cup Dark Brown Sugar, packed
  • 1/4 cup Honey
  • 1/4 cup Light Corn Syrup
  • 1/4 teaspoon Salt

Method
 

  1. Preheat oven to 275 degrees. Line a rimmed baking pan with parchment paper.
  2. Melt the coconut oil in a small pot over medium heat. Add the sugar, honey, corn syrup and salt. Stir. Let cook until the sugar dissolves, about 5 minutes.
  3. Pour puffed rice into a large bowl. Pour the sweetened mix over the cereal. Stir well to coat. Place on the prepared baking pan. Place in the oven for 15 minutes. Stir the mixture. Cook for another 15 minutes. Repeat again (cooking for 45 minutes total). Let cool and place in a sealed container.
