- Combine baking mix, xanthan gum, baking powder and spices in a medium sized bowl. Set aside.
- Bring potatoes to a boil in salted water. Let cook for about 4 minutes. Drain.
- Preheat deep fryer to 375 degrees, or heat oil in a pan that is at least 4 inches deep.
- Add melted butter and water to the dry ingredients. Whisk until a smooth but thick batter forms. It should be thicker than a pancake batter.
- Add diced veggies and fresh herbs into the batter.
- Using a small cookie scoop or 2 small spoons, take about 1 tablespoon batter (roughly 15 gm) and carefully plop into the hot oil. Fry for 4 to 5 minutes.
