French toast is my all time favorite breakfast. When I was a child I went through a stage of eating it for breakfast, lunch and dinner for a month (sorry mom). It is now one of Molly’s favorites as well. If you have made a loaf of bread specifically for French toast, cut it a little thicker (1/2 inch thick slices). To prevent the melted butter from clumping during mixing, warm the rice milk.

Ingredients
  

Primary Ingredient Group
  • 3 units Cook for Love Sandwich Bread or your favorite low-protein bread, very lightly toasted
  • 1/4 c Rice Dream, Original Enriched
  • 1 tsp Butter melted
  • 1 TBSP Light brown sugar
  • 1/4 tsp Ground cinnamon
  • 1/8 tsp Ground Nutmeg just a dash, to taste
  • 2 TBSP Cook for Love Pancake and Waffle Mix
  • 1/2 tsp Vanilla Extract
  • 1 TBSP Butter for cooking

Method
 

  1. Whisk rice milk, butter, sugar, cinnamon, nutmeg, pancake mix and vanilla in a bowl until well blended.
  2. Soak bread in mixture until saturated but not falling apart, 20 seconds per side. Carefully pick up bread slice and allow excess milk mixture to drip off.
  3. Heat 1/2 tablespoon butter in 12-inch skillet over medium-low heat. Add soaked bread to the skillet and cook until golden brown, about 4 to 5 minutes. Flip and continue to cook until second side is golden brown, 4 to 5 minutes longer. (If toast is cooking too quickly, reduce temperature slightly.)
