It is now one of Molly’s favorites as well. If you have made a loaf of bread specifically for French toast, cut it a little thicker (1/2 inch thick slices). To prevent the melted butter from clumping during mixing, warm the rice milk.

- Whisk rice milk, butter, sugar, cinnamon, nutmeg, pancake mix and vanilla in a bowl until well blended.
- Soak bread in mixture until saturated but not falling apart, 20 seconds per side. Carefully pick up bread slice and allow excess milk mixture to drip off.
- Heat 1/2 tablespoon butter in 12-inch skillet over medium-low heat. Add soaked bread to the skillet and cook until golden brown, about 4 to 5 minutes. Flip and continue to cook until second side is golden brown, 4 to 5 minutes longer. (If toast is cooking too quickly, reduce temperature slightly.)
