Typically we are making high and low protein waffles at the same time. I whip up 2 egg whites, and add 5gm to the low mix and the rest to the high. Both of the yolks go into the high mix. You can double the recipe and make toaster waffles – under cook the waffle a little, cool on a wire rack, wrap in plastic and freeze. Pop them into the toaster for a quick breakfast during the week. If the phe is too much, you can omit the egg white, but it adds a nice crispy texture, just like a high protein Belgian waffle.

- Heat waffle iron. Place pancake mix in a medium bowl.
- Beat egg white until it starts to hold a peak. Add the sugar and continue to whip until it is white and glossy and just holds a 2-inch peak.
- Add liquid ingredients to dry ingredients in a thin steady stream while gently mixing with a rubber spatula; be careful not to add liquid faster than you can incorporate it.
- Toward end of mixing, use a folding motion to incorporate ingredients; gently fold egg white into batter
- Spread appropriate amount of batter onto waffle iron. Following manufacturer’s instructions, cook waffle until golden brown, 2 to 5 minutes. Serve immediately. (You can keep waffles warm on a wire rack in a 200-degree oven for up to 5 minutes.)

These freeze beautifully — just defrost at room temperature and pop into toaster on low setting to crisp up
